GETTING TO KNOW HEATHER KENDALL…:) 

"I grew up in the booming metropolis of Greentown, IN. There's a Subway there now. It's kind of a big deal :) I went to  school at Eastern and graduated in 1992. Later on I attended IUK for 5 semesters. I couldn't decide if I wanted to study people's heads in Psychology or stud bones in Archeology, so I dropped out and started working. I went back in 2002 and got my license in Massage Therapy. I have one sister, Wendy, who is 6 years older than me. I didn't really have any hobbies growing up, unless you count sneaking out of the house and going to rock concerts I wasn't allowed to go to".

"I got married in 1999 to an incredibly handsome man who I've known since since we were 15. His name is Jason, but you'll only hear me to refer to him as Kendall. It's been that way for 30 years. We've got 2 kids, Liam, who's 18 and works in our detail department, and we have Lily, who is 15, going on 25. We've got 3 dogs. We adopted 2 brothers Jax, and Nero (Heinz 57 dogs) and then we have an ever barking, happy Chihuahua named Bear". 

"Hobbies would be still going to concerts, even though I don't have to sneak out now and we LOVE to go kayaking and traveling. I've been to 25 states so far and hope to see them all one day. On my bucket list is to retire and either buy a skoolie (a school bus home) and just spend our time traveling and being out in nature or I'd be happy with a really small cottage either on a mountain or by the see with NO neighbors".

ST PATRICK'S DAY CASSEROLE

INGREDIENTS:

1 1/4 pounds red potatoes cut into 3/4 inch cubes

4 cubs chopped cabbage 1 tablespoon melted butter

Butter-flavored cooking spray 1/2 cup white wine

1 1/2 pounds cooked corned beef, cut into 3/4 inch cubes

1 1/2 cups shredded Swiss cheese 1 tsp garlic powder

1/3 cup coarse-grained mustard 2 tsp ground black pepper 

4 sheets phyllo dough, thawed

DIRECTIONS:

  1. Place red potato cubes into a large saucepan, cover with water, and bring to a boil. Cook potatoes over medium low heat until tender, about 15 minutes; drain well.
  2. Place chopped cabbage into a saucepan and cover with water; bring to a boil. Reduce heat to medium-low and simmer cabbage until tender and softened, about 15 minutes; drain well. 
  3. Preheat oven to 375 degrees.
  4. Spray a 9x13 inch baking dish with cooking spray.
  5. Lightly toss potatoes, cabbage, corned beef, and Swiss cheese in a large bowl until well combined.
  6. Stir together mustard, white wine, garlic powder, and black pepper until smooth; mix into corned beef mixture.
  7. Spread mixture into the prepared baking dish.
  8. Lay a phyllo sheet onto a work surface and spray with cooking spray. Place the phyllo sheet onto the casserole, folding the overhang back over the dish; spray the dry side of overhang with cooking spray.
  9. Repeat 3 more times and brush the top layer with melted butter.
  10. Bake in preheated over until phyllo sheets are crisp and browned, 45-55 minutes.

  2. Muscle strengthening: Incorporate muscle-strengthening exercises at least 2 days a week.
  3. Flexibility training: Flexibility training is important too, but it is frequently neglected, resulting in increased tightness as you age and become less active.
